Mix together the cream cheese, chicken, red pepper, and cheddar cheese until combined
Spread the mixture on one side of each of the tortillas and roll up, place seaside down on a baking sheet lined with tin foil, and lightly coat each one with olive oil
Bake for 15 minutes in a 375 degree oven until golden brown, let cool for 5 minutes before cutting and using a serrated knife cut each one into 4 bite sized pieces.
For the sauce: Combine all the ingredients in a blender and puree until smooth
