The Pesto, Tomato and Avocado Sandwich is a quick and delicious sandwich for anytime of day.
Or the PTA sandwich as I call it. No, this has nothing to do with the school committee we are all familiar with, it was strictly a way for me yo remember what ingredients made up this sandwich.
While I have been making this sandwich for years now, I still remember the day I first discovered this combination. It was a warm summer afternoon and I was home from college. For most of my time in college I was a vegetarian, or more technically a pescatarian (I only ate fish). Looking through my parents refrigerator I realized there was not much I could make. They had some tomatoes from my dad’s garden and an avocado that was ripe. I pared that with some toasted bread and pre-made pesto and was shocked by how delicious it was! Needing a way to remember the combo my dad and I came up with the acronym PTA. A few days later we had some cheddar cheese in the house and I decided to add cheese, it is equally as good either way but you all know my love of cheese.
This sandwich is perfect for hot summer days when it is just too much trouble to run the oven or stove, and while those days seem quite a ways away from us now (there is a super blizzard headed right for the northeast) why not enjoy the feeling.

The crunch of the bread when you bite into it and the the creamy avocado and juicy tomatoes slices all mix beautifully together and the pesto just adds the perfect amount of seasoning. I will say, this is less of a “recipe” and more of a how to assemble one yummy sandwich or new ways to combine some familiar favorites. - 4 slices of bread
- 4 tablespoons of pesto
- 1 tomato, sliced
- 1 avocado, sliced
- 1 oz cheddar cheese, sliced
- Toast the slices of bread and then cover each slice with 1 tablespoon of pesto
- Layer the tomatoes, avocado, and cheese and top with a slice of bread.
- Cut in half and enjoy!
