Using a food processor, crush the cookies until crumbs, set ¼ cup of them aside
In a bowl mix the rest of the cookie crumbs, the pumpkin, pumpkin pie spice, and cream cheese, refrigerate for 30 mins if too soft to form balls
Form into ½ balls and set on wax paper, refrigerate for an hour or till firm
In the microwave or a double boiler, melt the chocolate, roll the balls in the chocolate then set on wax paper and sprinkle the extra cookie crumbs on each one, refrigerate until chocolate sets up
