Fall has always been my favorite season, and finally after a month of looking forward to fall it is here…THE FIRST DAY OF FALL!
You better believe I have busted into my pumpkin scented candles, pumpkin spice lattes, and yes I wore a scarf today! So to celebrate I have made the most simple but delicious pumpkin bites. You are going to find that these are the perfect way to welcome in this new season because of the pumpkin flavor and how quick they are to make.
Some helpful suggestions to those people out there that don’t have a food processor…don’t worry about it, I don’t have one either! What? How? Let’s just say I mange pretty well around here without one, until a month ago we also didn’t have a microwave (which I kind of really liked) and we got along fine without that too.
So for this I ended up going with a two step process to crush the cookies.
- Put half the cookies in a ziplock baggie and crushed them with a meat tenderizer (a heavy pan would work well too)
- Because I wanted very fine crumbs, I then put them into my blender in small batches
This resulted in the very fine crumbs you see above. Piece of cake.
- 1 package of maple creme cookies
- 8 oz cream cheese, softened
- ½ cup pumpkin
- ½ tsp pumpkin pie spice
- 12 oz milk chocolate chips
- Using a food processor, crush the cookies until crumbs, set ¼ cup of them aside
- In a bowl mix the rest of the cookie crumbs, the pumpkin, pumpkin pie spice, and cream cheese, refrigerate for 30 mins if too soft to form balls
- Form into ½ balls and set on wax paper, refrigerate for an hour or till firm
- In the microwave or a double boiler, melt the chocolate, roll the balls in the chocolate then set on wax paper and sprinkle the extra cookie crumbs on each one, refrigerate until chocolate sets up
