Pumpkin Maple Truffles - Only 5 ingredients bring this fall treat together to make little balls of fall joy! | chickandhercheese.com

Fall has always been my favorite season, and finally after a month of looking forward to fall it is here…THE FIRST DAY OF FALL!

You better believe I have busted into my pumpkin scented candles, pumpkin spice lattes, and yes I wore a scarf today! So to celebrate I have made the most simple but delicious pumpkin bites. You are going to find that these are the perfect way to welcome in this new season because of the pumpkin flavor and how quick they are to make.

Some helpful suggestions to those people out there that don’t have a food processor…don’t worry about it, I don’t have one either! What? How? Let’s just say I mange pretty well around here without one, until a month ago we also didn’t have a microwave (which I kind of really liked) and we got along fine without that too.

So for this I ended up going with a two step process to crush the cookies.

  1. Put half the cookies in a ziplock baggie and crushed them with a meat tenderizer (a heavy pan would work well too)
  2. Because I wanted very fine crumbs, I then put them into my blender in small batches

This resulted in the very fine crumbs you see above. Piece of cake.
